We Love Turkey Leftovers!

We know there tends to be a lot of food at Thanksgiving dinner, and if your family is anything like ours, we tend to have lots of leftovers.

One thing we almost always have leftovers of is TURKEY, but we don’t mind because we have so many recipes we can make with leftover Thanksgiving turkey.

Why we love leftover turkey:

  • No waste. After all of that work, you don’t want a single tasty morsel to go to waste!
  • Variety. Easily whip up a pan of leftover turkey Enchiladas or leftover Turkey Chili with chunks of turkey instead of ground meat.
  • Classics. Make turkey gravy and pour it over egg noodles, like a stroganoff.

MAKE TURKEY BROTH!

The carcass, basically the rib cage, is what is left over after carving your turkey. This is perfect for making a nutritious turkey broth.

Make your own bone broth. Bone broth can be used whether a recipe calls for broth, stock, or bone broth – most often in soups.

  1. PREP. Remove the meat and break up the carcass into a large stockpot. A little meat and connective tissue only add to the nutrients and flavor.
  2. BOIL. Add cold filtered water to the pot until it just covers the carcass. Bring to a boil. Remove any film that forms on top of the water, then reduce the heat and simmer for about 30 minutes.
  3. ADD AROMATICS. 1 onion (quartered),1 peeled carrot (chopped into 1-inch pieces), a stalk of celery (chopped into 1-inch pieces), 1-2 whole mushrooms, and herbs.
    • Tie the herbs together. For fresh herbs: bundle and tie with twine. For dried herbs: wrap in cheesecloth, then tie closed with twine. Use your favorite herbs, but common ones include parsley, thyme, bay leaf, and garlic.
  4. SIMMER. Keep uncovered and simmer for 3 hours. Periodically check on the soup and skim off any film.
  5. STRAIN the broth through a mesh sieve. Repeat until the broth is clear and free of any bone fragments, vegetables, and herbs.
  6. STORE. Keep homemade bone broth in the fridge for up to a week. Freeze it, in ½ cup portions, for up to 12 months. Be sure to use airtight and freezer-safe containers.

Storing Leftover Turkey

We recommend storing turkey sliced, wrapped in foil, then placed in a container/bag (if in the freezer – a freezer-safe container/bag).

  • STORE in the fridge for 3-4 days.
  • FREEZE for 2-3 months.
  • Reheat. The microwave is handy, but can dry out the meat, and make it a bit rubbery.
    • The best way to reheat the turkey, so it’s moist and flavorful, is in the oven. Preheat the oven to 300°F. Place the turkey, along with a bit of broth or water, into a baking dish. Cover it with foil and bake for 20-30 minutes, or until heated through.

Leftover Turkey Sandwich

One of the best things about the Turkey dinner is the Thanksgiving leftovers!

  • Use leftover Rolls or regular Sandwich Bread.
  • Add your favorite sandwich fixings like lettuce, tomato, onions, peppers, and avocado.
  • Add leftover Stuffing, Cranberry Sauce, or even gravy to the sandwich, like in this Turkey Cranberry Sandwich recipe.

FAQs

How long is leftover turkey good for in the fridge? ›

USDA recommends using cooked turkey within 3 to 4 days, kept refrigerated (40°F or less). Refrigeration slows but does not stop bacterial growth. Turkey can be frozen for 3 to 4 months. Although safe indefinitely, frozen leftovers can lose moisture and flavor when stored for longer times in the freezer.

Can I freeze cooked turkey after 3 days? ›

If your turkey has been properly handled, you can refrigerate and eat it for up to four days. If you are planning to freeze it, it's best to freeze it within one day of cooking for optimal texture and taste. However, leftover turkey can be frozen after three days and it will be fine.

How do I make leftover turkey moist again? ›

Place your carved meat in a shallow baking dish and cover it with stock. Cover the dish with aluminum foil and place in low oven, somewhere around 250 degrees, for 5-10 minutes. The dryness won't be entirely gone after this short broth bath, but the turkey will definitely be more moist than before.

How to make leftover turkey tender? ›

To reheat, preheat the oven to 325 degrees. Keeping the turkey in the roasting pan, pour a bit of stock (chicken, turkey, or veggie stock or broth will work) over the meat to moisten it. Cover with foil and bake for 45 minutes to an hour, or until the turkey is warmed through.

Is a 3 year old frozen turkey still good? ›

Frozen Turkey

Turkeys can be kept in the freezer indefinitely. However, cook turkeys within 1 year for the best quality.

Is it safe to eat leftover turkey after 6 days? ›

The answer is simple: leftovers can be kept in the refrigerator for three to four days. This means you have until the Monday after Thanksgiving to eat all those delicious leftovers or place them in the freezer to enjoy later. If you store leftovers in the freezer, they will be of best quality within 2-6 months.

Can I eat cooked turkey after 5 days? ›

Snyder points to the USDA FoodKeeper app for best guidance: The tool notes that refrigerated, cooked turkey should be eaten within 4 days. Eat frozen turkey leftovers within 6 months for premier quality.

What to do if my turkey is still frozen after 5 days? ›

If your turkey is still frozen solid:

Try a safe quick-thawing method. Cold water: Keep the bird in its airtight packaging or a leak-proof bag, submerge it in cold water, and change the water every 30 minutes. Microwave: Use your manufacturer guidelines to thaw for about 6 minutes per pound.

Can you reheat turkey after 4 days? ›

Safety tips for reheating turkey

Cold, cooked turkey meat will keep in the fridge for up to four days, but always use your best judgement. Always reheat cold turkey until it's piping hot, not just warmed through. Only reheat cooked turkey once.

Why does leftover turkey taste different? ›

The flavor is variously described as "rancid," "stale," and like "cardboard," and even compared to "damp dog hair." Warmed-over flavor is caused by the oxidative decomposition of lipids (fatty substances) in the meat into chemicals (short-chain aldehydes or ketones) which have an unpleasant taste or odor.

Why is my turkey tough and chewy? ›

Or even worse burning the turkey. Undercooked turkey can contain harmful bacteria, posing a risk to food safety. On the other hand, if you overcook a turkey it's going to be too tough and chewy! The best way to avoid this is by taking out the turkey right before the thickest part reaches 165°F (74°C).

Does reheating turkey dry it out? ›

To not dry out a turkey, you need to add moisture when you reheat the meat. You'll see in our reheating methods that we add homemade gravy, chicken stock or butter to the turkey before heating it up low and slow. This ensures that juices in the turkey won't escape as steam when they're exposed to heat.

What if I cook my turkey upside down? ›

Cooking a turkey upside down allows the juices to trickle down during the roasting process for extra moist and juicy breast meat. Plus, since the dark meat is closer to the heat source, it cooks faster than it does with the traditional method. It's a win-win!

What tenderizes turkey? ›

Applying salt to an uncooked turkey, either by soaking in a water solution (wet brine) or by sprinkling salt directly on the bird (dry brine) causes the protein strands in the meat to break down over time so the meat tenderizes, absorbs flavors, and retains moisture.

What tenderizes turkey meat? ›

Brine Your Bird

Soaking the turkey in this saltwater mixture helps to tenderize the meat while adding flavor and moisture throughout the entire turkey. The simplest of brines is plain ol' saltwater, but we love to add herbs and spices to give the turkey as much flavor as possible.

Can you eat leftover turkey after 5 days? ›

As a general guideline, the U.S. Department of Health & Human Services recommends eating or freezing turkey and other leftovers within three to four days.

Can you eat turkey 5 days after Thanksgiving? ›

Turkey: 3-4 days.

Eat turkey within three to four days of cooking. If you use the turkey in a new dish like a soup or casserole, only consume within those initial four days. Another option is freezing the cooked turkey. Turkey can last up to four more months if frozen.

Is it OK if turkey was left in fridge for a week? ›

The U.S. Department of Agriculture (USDA) recommends using cooked turkey within three to four days as long as it is kept refrigerated at a temperature that is 40°F or lower.

Can I keep a fresh turkey in the fridge for 5 days? ›

Buy a fresh turkey one to two days before the day you plan to cook. If there is a 'best-by' or 'use by' date on the manufacturer's label, then you can keep fresh poultry, unopened, in the refrigerator until that date.
