Balsamic Steak Salad Recipe

I love a good hearty salad and this steak salad with balsamic dressing is not only filling but ultra flavorful! Beef is one of our favorite proteins over here and I love serving it in a variety of ways.

I usually use leftover steak in this salad but it literally only takes a few minutes to cook a steak up fresh if you need too. Lightly season it with salt and pepper, then pan fry it in butter and oil until it’s medium-rare {145ºF} on the inside. Let it rest for 10 minutes before slicing it for the salad.

The easiest way to build this salad is to layer the ingredients over the mixed greens. It looks amazing and it’s so easy! I usually pour half of the dressing over the steak salad and serve the rest on the side so everyone can have as much as they like.

Ingredients for Blue Cheese Steak Salad

For the Steak Salad

  • 8 ounces cooked steak sliced, see note
  • 10 ounces tomatoes sliced
  • 4 cups salad greens
  • 1 purple onion sliced
  • 1/3 cup gorgonzola cheese or blue cheese, see note

For the Balsamic Dressing

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon garlic minced, about 1 clove
  • 2 teaspoons honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Gorgonzola Steak Salad

I used gorgonzola cheese for this steak salad recipe, but blue cheese will work as well. I highly recommend using a high-quality cheese, either way you go. Higher quality gorgonzola or blue cheese will be a little more expensive, but it is totally worth it for this steak salad.

Usually, the higher quality the cheese, the more flavorful it will be. The steak can hold up to the strong flavor of either cheese, as can the balsamic dressing.

Steak Salad Dressing

Speaking of the dressing, let’s talk about how good it is!! I love all the subtle flavors happening in the balsamic dressing.

If you want to kick up the flavor of the balsamic dressing, even more, crumble some of the gorgonzola cheese into the dressing and let the flavors meld for about 30 minutes.

How to make Steak Salad with Blue Cheese or Gorgonzola

  1. For the Dressing, combine all ingredients in a mason jar. Shake well to combine.
  2. For the Steak Salad, layer the sliced steak, tomatoes, and onions over the salad greens.
  3. Crumble the cheese over the top.
  4. Top with half of the salad dressing, serve the rest on the side.

Variations for Steak Gorgonzola Salad

  • As mentioned, you can substitute blue cheese for the gorgonzola cheese.
  • Use whatever vegetables you’d like in the salad.
  • The salad greens can be any combination you like.

Notes

8 ounces of steak is about 2 small steaks or 1 large steak. I use a variety of cuts for this recipe. New York strips are our favorite.

Blue cheese can be substituted for gorgonzola. The amount of cheese is flexible.
